Sloppy joes

Don’t scoff until you’ve tried it. This is protein powerhouse without fats or cholesterol. You could use a sloppy joe mix or make your own to keep better tabs on the ingredients and sodium. 

1 block of firm tofu (not silken)
1 small yellow onion 
2 cloves of garlic 
1 stalk of celery
1 small can of tomato paste 
1 tsp paprika 
1 tbl apple cider vinegar 
1 tsp sugar (brown or white)
1/2 – 1 cup water 
Dice veggies and cook in pan with a tsp oil. Add tofu (small cube or crumbled) and cook until tofu liquid is gone. Add 1 tbl soy sauce if desired. Add paprika, sugar, tomato paste, and vinegar. Mix and add water. Stir until heated. 

Start to finish this is 10 minutes. 

The sodium in this is higher because of the pickles. Without them this is a very sodium light meal.
