I understand that I can't understand what it's like to be a person of color here in America. In order to respect those who have had their voice silenced for far too long I am not posting to my feed this week. Solidarity takes many forms, and for right now I can listen and learn from those who need to be heard. Cashew Ice Cream recipe that doesn't require an ice cream maker! 🤤 * The cashew butter mixed with cacao butter gives it a silky mouth feel that is buttery and rich. It's so much flavor and even just a little dish will satisfy all your ice cream cravings! 😘 * 1 cup raw cashews *Soaked overnight 1 cup water 1 cup coconut cream 1 cup granulated sugar 1/4 cup water 2/3 cup @navitasorganics cacao butter 1/4 cup coconut oil 1/2 cup cashew butter 1/4 cup coconut sugar 1 tsp salt * Drain cashews and rinse. Set aside. Boil 1/4 cup water then reduce to simmer. Add sugar and stir until sugar has dissolved over heat. Reduce heat to low. Add coconut oil, cacao butter, cashew butter. Wisk until cacao butter has melted. Add all ingredients to a blender and blend until smooth. 🤤 * Cover and refrigerate for an hour. Remove and whisk well. Refrigerate for another hour. Remove and wisk well. The vegan grandslam! Whole wheat and oat pancakes topped with scrambled soft @morinutofu and pan cooked tempeh. It's loads of plant based protein and fiber plus when paired with fresh @driscollsberry it's everything you need for a great start to your day! Recipe for the pancakes are below. Check out my bio link for the scrambled tofu and tempeh recipes. 🌱⠀ ⠀ 1 cup whole wheat flour⠀ 1/2 cup old fashioned oats⠀ 3 Tbl brown sugar⠀ 2 Tbl baking powder⠀ 1 tsp salt⠀ 2 Tbl ground flax⠀ 1/4 water⠀ 1 1/4 cup oat milk⠀ 3 Tbl avocado oil⠀ 1 tsp vanilla extract⠀ ⠀ Combine flax and water. Set aside. ⠀ ⠀ Whisk together flour through salt. In a separate bowl whisk together the oat milk, oil, and vanilla. Lightly whisk the soaked flax with the wet ingredients. Fold the wet mix into the dry until no dry parts remain. Some clumping is okay. Don't over mix. ⠀ ⠀ Spoon out 1/4 cup batter per pancake onto a heated and lightly oiled non-stick griddle or pan. Cook pancake until bubbles form on the top then flip. I have many unearned privileges in this society because I was born with white skin and male reproductive parts. I have done nothing to earn the ability to set of a store alarm and be politely questioned if the cashier forgot to remove the tag. Our society here in America is deeply flawed. Discrimination is thriving even though we are well into the 21st century. George Floyd is just one example of the countless examples of how we as a people allow injustice to occur and perpetuate prejudice and discrimination. George Floyd was murdered. There are no excuses or justifications. The pictures and videos of him pressed to the ground are a painful reminder at how little we have done as a country to value human life. ⁣⁣ ⁣⁣ I know that writing this post isn't going to magically make everything better in the world. However, I have a big enough voice here to be able to speak up for a fellow father who was denied his voice. What I hope is that others will take a moment to pause and let the reality of what's going on to sink in. Our nation is hurting and it's because we've allowed pain to go unheard. The first step is to acknowledge there's a problem with discrimination. The next is to say that problem is unfair, unjust, and cruel. From there it's about awareness, education, and action. ⁣⁣ ⁣⁣ As I've been reading and reflecting on everything going on I came across a post by Billie Elish. Her words hit me with their humbling brutal reality. "If all lives matter why are black people killed for just being black? Why are immigrants persecuted? Why are white people given opportunities that people of other races aren’t? Why is it okay for white people to protest literally being asked to stay at home while carrying semi-automatic weapons? Why is it okay for black people to be called thugs for protesting the murder of innocent people?” she wrote. “Do you know why???? White. Fucking. Privilege.”

Epic vegan burrito that's nearly bursting at the seams. Shaved seitan using the recipe on my blog, simmered in homemade salsa. Cilantro lime cashew sour cream (recipe below). Baby kale. Avocado. Easy, filling, and everyone at the table can customize their own so that no food goes to waste.
