Homemade Spaghettios! Easy, loaded with veggies, and a nostalgic lunch for adults and a bowl of awesome for kids. Shout out if you lived on Spaghettios in your childhood! 🥰 * 4 carrots 2 stalks celery 1 medium yellow onion 2 Tbl @earthbalance butter 2 tsp paprika 1/2 tsp onion powder 1 tsp salt 1 tsp brown sugar 1/2 cup oatmilk 1/4 cup nutritional yeast 28 oz. can of diced tomatoes 2 cups Anellini noodles (rings) 🌱 * Dice carrots, onions, celery. Melt butter and sauté veggies for 1 minute. Add 1/2 cup water, cover, and simmer for 5 minutes. Your carrots should be soft. 🌱 * Bring 4 cups salted water to a boil and add noodles. Cook for 5 minutes and drain. 🌱 * Add all ingredients, except noodles, to a blender and puree until smooth. If sauce isn’t smooth, add a little more milk or water. Pour sauce into pot and heat until bubbles form. Add cooked noodles and mix. Served here with a can of @lapreferidainc pinto beans. 🌱 * Makes 8-10 kid sized portions! Head to my blog using the link in my bio. 🌱 * Wild yeast is more resistant to acids than the yeast you buy in the packets so it's able to withstand and work with the naturally occurring lactic acid bacteria that occurs in a sourdough starter. That's what gives sourdough it's namesake, sour. If you've got a starter sitting on your counter, give it a whiff. The smell you're taking in is that lactic acid, a product of yummy bacteria. Every wild yeast strain, which varies by geographic location, works differently with acids so that a San Francisco starter will produce a different flavor than a New York one or a Canadian one. 🌱 * This is a great time to start learning the ancient art of bread making! All you really need is flour and water. No starter? Make one! The Waffalafel. Fun to say and even more fun to eat. It's a falafel baked to crispy perfection using your waffle maker. The only oil you need is a spray to keep it from sticking! 🙂 * 1 cup dried chickpeas, soaked overnight 1/2 cup parsley, chopped 1/2 cup cilantro, chopped 1/2 cup yellow onion, chopped 3 cloves garlic 1 teaspoon cumin 1/2 teaspoon salt 1/2 teaspoon baking powder 2 tablespoons lemon juice 🌱 * Drain the soaked chickpeas. Put everything into a food processor and process until combined. You may need to scrape the sides once or twice. Heat waffle maker and spray with oil. Make a mound in the center with 1 cup of the falafel mix. Close waffle maker and cook for 10-12 minutes. Can you waffle my cashew Mac and Cheese? Answer. Yes. And it's delicious. For every cup of Mac and Cheese add 2 Tbl rice flour or wheat based flour. Spoon it into the center of a well oiled waffle maker. Make the pile about 3-4" high. Then close it till it locks shut. Easy! It's. Umm. Ya. Just do it.
