Peanut Sauce Tacos

  • 16 oz crushed tomatoes
  • 1 tsp coconut oil
  • 2 tsp adobo sauce* (can skip and use chili powder if you don’t want the little heat)
  • 1 tbl lime juice
  • 1 onion minced
  • 3 cloves garlic minced fine
  • 1 tsp sea salt
  • 1 tsp oregano
  • 1 tsp smoked paprika
  • 1/4 cup peanut butter
  • 1 tbl maple syrup
  • 1 tbl chopped cilantro
  • 1 pound seitan (tofu or lean meat)

Mix all ingredients except maple syrup and cilantro and blend in a food processor, blender, or immersion blender. Coat setain and broil for 5 min on high. Flip/stir. Broil for 5 min more. Drizzle maple syrup and broil 2-5 min more until blackening starts.

Sprinkle cilantro on top and serve!

You wouldn’t think of mixing peanut butter and tomato but it works. It’s like a mole but without all the secret ingredients. The nutty flavor helps offset the acidity of the tomato and makes a creamy sauce that is loaded with flavor. If I were a meat eater I’d think it would work well with chicken. But, I have no clue so you’ll have to try it and let me know.
