Baked donuts are cakey and filling compared to their fried counterparts. These will delight your taste buds and satisfy your chocolate cravings while keeping you full through the morning!
This recipe is vegan and gluten free but that doesn’t mean it’s “healthy” for you. But. It’ll make your soul happy and that matters. If you try it out let me know! There are many ways to modify the recipe for different flavors and add-ins. I have added 1/4 cup of neutral flavored protein powder to make these even more nutritious.
Ingredients
- 1/2 cup non-dairy milk
- 1/4 cup neutral flavored oil
- 1/4 cup soft Mori-nu tofu (takes the place of 1 egg)
- 1 tsp vanilla extract
- 1/8 tsp almond extract (optional)
- 1/4 cup sugar
- 1 Tbl baking powder
- 1/2 tsp baking soda
- 3/4 cup cocoa powder
- 3/4 cup finely ground almond flour (finely ground is important)
- 1 cup gluten free flour blend (or all-purpose flour)
- 1/4 tsp salt
- 1/2 cup unsweetened applesauce
Instructions
Preheat oven to 375 F. Whisk together all dry ingredients. In a separate bowl, vigorously whisk the wet ingredients or use a blender. Oil two donut trays. Divide batter to fill all 12 donut spots. About 3-4 Tbl per donut.
Bake for 16-18 minutes. Let cool in pan for 5 min. Remove from donut pan and place on parchment lined baking sheet. Bake for 5 min, remove from oven, let cool place on wire rack.
This recipe also works as a vanilla donut. Omit the cocoa powder and up the vanilla to 1 Tbl. Add in some lemon zest too!
