Gluten Free Waffles

Even if you’re not restricting gluten from your diet, it is good to incorporate a variety of foods into your day of eating. I realized that I was depending on wheat based products for two to three meals a day so I’ve been developing gluten free options of my favorite foods. The problem is that most GF foods are rubbery and terrible. These waffles have great flavor and are crispy! Get your cook on!

Ingredients

Instructions

Mix together milk and vinegar and let sit while you prepare the other ingredients. Let sit at least 5 minutes.

Whisk all dry ingredients together well. Add maple syrup, vanilla, and oil to milk. Whisk.

Measure out 1/2 cup liquid from can of chickpeas (aquafaba) and add cream of tartar. Using your own muscles or a mixer whisk until peaks form: about 5 minutes. Mix dry and wet ingredients together. Fold in aquafaba until completely incorporated.

Spray waffle maker plates with oil. Measurement of batter and cook time will depend on your waffle maker. However, most cook in 6-7 minutes. Store waffles in 200F oven until ready to enjoy!

Yield is enough to satisfy 4 people. How many waffles depends on the size of your waffle maker.
