
Keep your soup simple for a happy and hearty life. This recipe uses few ingredients and can be prepped ahead to make a delicious meal during a crazy work week. Roast, boil, or steam your squash during your meal prep time and refrigerate it or freeze it flat in a Ziploc. This recipe can be enjoyed on its own or jazzed up with toppings like more veggies, tofu croutons, seeds, nuts, etc.

Don’t fear the curry! If you’ve never had curry before you might be thinking it will be hot and spicy. Curry is a lot of things really and kind of a meaningless term, because there are so many variations as to what curry actually is; however, most of the time that you’ll see “curry” here in the States it’s referring to yellow curry powder. Yellow curry powder is your entry into the world of curries because it is mild. I like it for this soup, because I don’t want to sip a whole bowl of potent curry, but I do want that hint of spices to neutralize the sweet of the squash and pair with the dill.

2 Tbl ground cumin, 2 Tbl ground coriander, 2 tsp ground turmeric, 1/2 tsp red pepper flakes, 1/2 tsp ground mustard seeds, 1/2 tsp ground ginger
Curried Acorn Squash
Equipment
- Immersion blender or upright blender
Ingredients
- 1 acorn squash (cooked and flesh removed)
- 1 medium yellow onion
- 2 cloves garlic
- 2 stalks celery
- 1 Tbl neutral oil (canola, avocado, etc.)
- 2 Tbl all purpose flour
- 1/2 tsp dill weed (dried)
- 1/2 tsp yellow curry powder
- 2 cups vegetable broth (no/low sodium is best)
- 14 ounce coconut milk (full fat is best but can use lite)
- 1/2-1 tsp salt
Instructions
- In a sauce pan or pot saute the onion, garlic, and celery with the oil until the onion becomes translucent: 2-3 minutes.
- Add flour and stir until the flour is incorporated in with the rest of the ingredients in the pot. Cook while stirring for 30 seconds.
- Add the rest of the ingredients EXCEPT for the coconut milk. Bring to a boil then reduce heat to a simmer and cook for 5 minutes. Stir while heating.
- Add in the coconut milk and then blend using an immersion blender or an upright blender. *Be careful to follower manufacturer’s guide for blending hot liquids in a blender. Serve immediately or store in the refrigerator for meal prep.
